Fourth-generation winemaker Dominique Gallois follows his family's century-old philosophy of minimal intervention, hand-harvesting fruit that undergoes cold maceration and native yeast fermentation before 18-24 months aging in oak casks. This wine displays classic Gevrey character with aromas of red cherry, earth, and subtle spice, showing the structured tannins and mineral backbone that define this renowned Burgundian village.
