Ovum Wines is dedicated to producing Riesling and Gewurztraminer from single sites in Oregon and Washington. Through minimal processing, the wines are a clear representation of the vineyard and vintage.

Old Love (in Ovum’s words) combines mother nature, with a proprietary aging process to elevate the terroir that each of the five vineyards bring (citrus, salinity, bright acidity, florality, ripe apricot). It's a dry white blend that dreams of capturing the summer sun in a bottle of wine. Aromas of fresh cut blood orange, salty lemon and aloe vera typify this racy, texturally rich white wine.

The grapes were manually harvested at Aussie levels of ripeness, with indigenous yeast, ambient ferment, part macerated on skins (3 days) and part whole cluster straight pressed to tank. 40% saw some maceration, 40% was racked into Novum amphora, Austrian oval cask, egg and neutral oak, with the remainder in tank. Fermented for six months on gross and fine lees, with no fining and only a tiny amount of sulphur used.

Grapes: 95% Riesling, 5% blend of other grapes
