Dopo la vendemmia manuale,

Dopo la vendemmia manuale, avviene la macerazione a freddo, seguita dalla fermentazione: successivamente il vino sosta per almeno un anno in acciaio e cemento.
Si abbina con primi della tradizione, secondi di carne e formaggi di media stagionatura.
