This beautiful collection of Ceres Central Otago wines perfectly showcases the beliefs of the brand. Ceres wanted their wines to reflect the vineyards they are grown on. They also respect the land and have a comprehensive and ethical approach to viticulture meaning we only employ truly sustainable practises. Great wine is made on the vineyard and the most important input is the grapes - which is why they chose to name the wine after the Roman Goddess of Agriculture!
The Ceres wine brand is the result of a collaboration of brothers Matt and James Dicey. James Dicey is the viticulturalist for Mt Difficulty and the grapes from Inlet Vineyard are grown to the Mt Difficulty standard. This means a lot of hand care and attention and low yields to ensure concentrated and intensely flavoured grapes. Yields are restricted to a maximum of 6t/ha and all grapes are hand harvested.
2x Ceres Bannockburn Black Rabbit Central Otago Riesling 2018
Showing brilliant purity and poise, this exquisite Riesling shows white flesh nectarine, rockmelon, lemon peel and apple blossom aromas on the nose, leading to a focused palate that is superbly concentrated. This is a beautifully refined, taut, medium-sweet Riesling with a fine line and crisp acidity. The wine offers subtle sweetness which is perfectly balanced by vibrant acidity, finishing lingering and mouth-watering. Elegant yet powerful with a gorgeous flowing mouthfeel. At its best: 2019 to 2028.
The fruit for this wine was harvested on the 13th March in excellent condition. The fruit was destemmed and pressed to tank where it was settled for a week, before racking slightly cloudy for ferment. The wine was fermented with native yeasts, the wine stopped naturally with 35g/L of residual sugar. The wine was filtered but not fined before being bottled in June.
